Winter Scarf Dinners ran on Tuesday nights at The Lincoln (formerly Hotel Lincoln) in Carlton from June 9th – August 11th. The Lincoln chefs created a delightful two course set menu (entree + main, $40 per person). There were hearty dishes like an entree of pork terrine, pork and morcilla croquettes and quince. For main, the winning dish would have to have been the slow-cooked lamb shoulder with white beans and green sauce. There were a couple of nights where we came very close to running out of lamb!
Our stellar crew of front-of-house trainees (there were eight of them!) did a fantastic job looking after our record number of hungry customers. They were supported by a fantastic bunch of mentors, who came from venues like Mamasita, O’Connell’s, Gerald’s Bar and Shebeen.
On Tuesday afternoons throughout the program, the trainees undertook wine training with Jenny ‘The Wine Whitch’ Polack’, beer training at Little Creatures Dining Hall and coffee training at The Vertue of the Coffee Drink. Our bar and cocktail training happened at Kitty Somerset in Thornbury. We also ran training sessions on formal service, olive oil tasting, resume drop-off and interview practice (at Ladro) and had a fantastic tour of The Sofitel on Collins.
Huge thanks to Iain, Lachie, and all The Lincoln staff, who were an absolute pleasure to work with! We only hope we might be able to come back for another dinners season in the future!
